Holiday Brunch “Facon”? Try This Vegan Recipe

I’ve tried to make fake bacon out of so many products. Eggplant seems to mimic the texture of bacon the best. These are so tasty in sandwiches. It’s a great vegan recipe to try if part of your tradition is “facon” for holiday breakfast or brunch.

Here is how to make your own eggplant “bacon” at home.

 

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 12 slices

Ingredients

1/2 medium eggplant

2 Tbsp cooking oil

2 Tbsp soy sauce

1 Tbsp Worcestershire sauce

1 Tbsp maple syrup

1 tsp liquid smoke

1 tsp paprika

1 tsp garlic powder

1 tsp black pepper

Procedures

Preheat oven to 225 degrees F (107 degrees C). Line a baking sheet with parchment paper or foil.

Peel the eggplant.

Using a knife or mandolin, slice the eggplant into thin, bacon-length strips.

In a bowl, combine the oil, soy sauce, Worcestershire sauce, maple syrup, liquid smoke, paprika, garlic powder, and black pepper.

Use a spoon to saturate both sides of the eggplant slices with sauce. Alternately, submerge the slices in the bowl, as I did in the second photo.

Place the strips in a single layer on the baking sheet. Sprinkle with more black pepper.

Bake for 20 to 30 minutes or until the eggplant is a deep red color and crispy. Enjoy your holiday brunch “facon” on Christmas or any day!
